Partida's slow and careful process of fermentation and distillation produces a superior quality tequila unmatched by any competitor. After the agave has been baked and shredded, the critical process of fermentation can begin. Partida allows the agave juices to ferment slowly for 36-40 hours, creating a high quality raw spirit. From the fermentation tanks, the spirit is ready for distillation. Precise temperature control and twice distilled, Partida produces an excellent unaged Tequila (and the base for aged Partida Tequila). Partida Blanco goes directly to the bottle.each one filled by hand. After all, the human touch is the last touch the tequilas will "feel" before leaving the fabrica-this is the Partida Tequila way.
